Grilled Eggplant, Tomato, & Parmesan Pizza

I do not have much experience cooking with eggplant, but when I saw it in my produce basket I thought about the best eggplant pizza I had when I was on a trip to Italy two years ago.  I wanted to experience the decadent flavors of that pizza again.  So, I made my version of an eggplant pizza!  The ingredients from my basket were eggplant, tomato, and basil.  The tortilla is Ezekiel brand.  Love this brand because it is filled with nutrients and really tasty too!  The tomato sauce I used was Muir Glen.  This tomato sauce is so sweet and is my favorite.  Finally, a little fresh parmesan chesse on top is a treat!  My grilled eggplant, tomato, & parmesan pizza ... enjoy!

Ingredients:
  • 1 small eggplant
  • 1 tomato
  • 4-5 basil leaves
  • parmesan chesse
  • 1 whole wheat tortilla
  • 1 T tomato sauce
  • salt & pepper
  • olive oil

1. Pre-heat oven to 400 F
2. Thinly slice the eggplant and tomato.  Drizzle with olive oil and sprinkle with salt and pepper. 
3. Grill eggplant and tomato until grill marks appear and the veggies are golden.  Remove to a plate.
4. Toast the tortilla in the oven for 4 min until it is crispy but not brown.
5. Cover a baking sheet with aluminum foil and lightly spray with cooking spray (easy clean up!)
6. Top Pizza with tomato sauce, grilled eggplant, and grilled tomato. Tear the basil leaves and sprinkle over pizza.  Top with freshly grated parmesan cheese.
7. Put pizza on baking sheet and bake until the crust is brown on the edges and the cheese is melted.
